december 2, 2004Here's something I cooked up for last night's dinner. It came out pretty good, so I thought I'd share the recipe.
Mookie's Beef and Potatoes (and Corn) Pot Roast
1 Can Mushroom Gravy
1 Cup Water
2 1/2 Pound Beef Pot Roast
3 Medium Potatoes
1/2 Small Onion
1 Can Sweet Corn Kernels
- Take the pot roast and cut away all the fat.
- Coat a pan with olive oil and brown the pot roast meat on all sides.
- Pour mushroom gravy into slow cooker.
- Drain corn of all liquid.
- Pour corn into slow cooker.
- Wash and cut potatoes into one inch cubes (leave skin on).
- Wash and dice half of a small onion. Put into slow cooker.
- Add one cup water to slow cooker.
- Place the pot roast meat on top of everything.
- Set slow cooker for 8-10 hours.
Cut beef when done and enjoy over rice. Yum!
